SOCCA
A speciality from the region of Nice, la socca is a little pancake made with olive oil and chickpea flour. Mmm! Delicious with a chilled rosé…
Ingredients:
- 150 g (1/4 cup) of chickpea flour
« Available at most Middle Eastern grocers or health food stores » or possibly « You can grind dried chickpeas to a fine consistency in a coffee grinder»
- 200 ml (3/4 cup) water
- 45 ml (3 tablespoons) olive oil
- 3 g (1/4 teaspoon) table salt
- Ground pepper
Method:
Preheat pan on stovetop on medium heat
Mix all ingredients in a bowl, stirring well
Add olive oil to the pan
Pour a ladle of the batter (75ml or 1/3 cup) into the pan
Cook like a crêpe, turning once
Enjoy plain or with roasted vegetables, smoked salmon, cheese, etc...
